Thanksgiving = Broccoli Cheese Rice Casserole
Is there one dish that you have every year for Thanksgiving? What one dish did you hope your mother made, just because it was your favorite. Is there a dish that your spouse just doesn't understand why you insist on having every year along with the turkey?
For me it is a recipe that my mother made, and was given to her by my grandmother. I know it is not an original recipe, and was probably found on the back of a can of soup or box of rice. I will give credit to Kraft foods, but I have yet to find this exact recipe on any of their sites. I love that the recipe calls for Oleo, and honestly for years I did not know what that was, as you certainly cannot buy it in any grocery stores to day. There is something about this recipe that I just love, and reminds me of home. As each of us has grown, and the menu is no longer made just by who ever is hosting, this dish has been delegated to myself, my mom, or my cousin....but it just has to be there or it wouldn't be Thanksgiving.
Broccoli Cheese Rice
Casserole
1 stick Oleo (Margarine or butter)
2 cups of
Minute Rice (uncooked)
¾ cup diced
onion (1 small white onion)
2 pkgs
frozen chopped broccoli
1 can cream
of chicken soup
1 can cream
of celery soup
1 (8oz) jar
of Cheez Whiz
½ cup of
water
1 cup of
milk
Preheat oven
to 350
- Sauté onion in butter in frying pan, on the stove top.
- In a bowl mix: broccoli, uncooked rice, soups, water, milk, Cheez Whiz, and sautéed onion.
- Pour into well greased 9x13 dish and bake at 350 for 30 to 40 minutes. Top of casserole will be golden brown, when properly baked.
